It’s been 2 years since I last visited Vietnam, and I’ve been missing the country so much! I miss the people, the cities, the small towns, and I especially miss the food!!

Fortunately, Edge Restaurant at Pan Pacific Singapore is offering “Tastes of Vietnam” buffet. We visited the buffet and my cravings for Vietnamese food has been largely satisfied!

The “Tastes of Vietnam” is a collaboration between join Pan Pacific Singapore’s Executive Chef Andy Oh with Pan Pacific Hanoi’s Executive Chef, Chef Zack Truong, and Junior Sous-chef, Chef Hoa Trung Kien.

With nearly two decades of culinary experience around the world, from Dubai to Maldives, Chef Zack has marvellous ability to blend traditional Asian techniques with the finest ingredients, while mastering the rich and dynamic flavours of the Vietnamese cuisine.

”Tastes of Vietnam” features popular Vietnamese cuisines (such as Pho and spring roll) as well as some hidden gem dishes.

For me, my favorite dish has to be the classic Pho. Thinly sliced meat, aromatic broth, delicate rice noodles, one bowl is definitely not enough!

Beyond Pho, there are many dishes which I’ve tried and Vietnam and they truly bring back all the memories I had when I visited the country. These are Fresh Spring Roll with Prawn, Fried Prawn Meat with Sugar Cane, Grilled Pork Belly with Fermented Rice and Galangal, Wok-fried River Prawn with Tamarind Sauce.

And there are also some dishes which I’ve never tried before, such as Mini Savoury Pancakes with Prawn Coconut Cream, Beef Wrapped in Betel Leaves, Wok Fried Glass Noodle with Eel, Jellyfish Salad with Chilli and Lime, Stir-fried Kohlrabi with Dried Shrimp, Grilled Banana Wrapped in Sticky Rice with Coconut Sauce. These dishes taste quite familiar for my Southeast Asian tongue and I truly enjoy trying these new dishes.

It’s not all Vietnamese food at Edge. In addition to Vietnamese spread, Edge offers a wide array of delectable creations, spanning Singaporean, Chinese, Malay, Indian, Japanese, Thai, and western cuisines, as well as an extensive seafood spread, including freshly shucked Oysters, Snow Crab Leg, Sustainable Boston Lobster, Tiger Prawns, Pacific Clam, Half Shell Scallops, Sea Conch, Black Mussel, and Crawfish.

There are live pasta station, carving station, pizza station, sashimi station, and so many more. It is truly a Food Theatre at Edge.
